Fast Food, Thai Style

This is a fairly typical view of the pre-made food available at truck stops across Thailand. You’ll also find an array much like this as part of nearly any street food scene. One year my first stop after a 10-day meditation retreat was at a truck stop like this — after two weeks of the same four dishes over and over and over, it was one of the most memorable meals I’ve ever eaten!
